We Love This Viral Mississippi Chicken Potato Skillet!

I stumbled upon this Mississippi Chicken Potato Skillet, and let me tell you, it’s a game-changer. Usually, I’m all about the crock pot, but this skillet version? Pure perfection. Juicy chicken, seasoned to the heavens, mixed with crispy potatoes, melted cheese, and a hint of zing from banana peppers.

How to Make Mississippi Chicken Potato Skillet

Let me share a secret – my husband, Dan, couldn’t stop raving about this dish. He even messaged me separately on Instagram, and that’s a serious endorsement in our house. When you impress the man who usually says, “Yeah, it’s good,” you know you’ve hit a home run.

Ingredients:

  • Boneless, skinless chicken thighs
  • 1/2 packet ranch seasoning
  • 1/2 packet au jus (oju) seasoning
  • Potatoes (white or preferred type)
  • Olive oil
  • Salt and pepper
  • Butter
  • Shredded cheddar or mozzarella cheese
  • Banana peppers or sliced pepperoncinis

The Recipe:

First things first, grab a bunch of boneless, skinless chicken thighs. I usually just go for the whole package – gotta feed the family, you know? Chop those bad boys into bite-sized pieces. Don’t stress about perfection; we’re going for flavor town here.

Here’s where the magic begins. In a bowl, mix up ranch seasoning and au jus seasoning. But wait, we’re rebels here – use only half a packet of each. Trust me, it’s the perfect balance. Now, coat those chicken pieces in this seasoning symphony. Get every nook and cranny covered.

Potatoes join the party! I went with white potatoes, kept the skin on (who needs the extra work, right?), and cut them into home fry size. Toss them in olive oil, salt, and pepper, and into the air fryer they go at 400 degrees. Eighteen minutes later, golden perfection.

In a pan, melt a couple of tablespoons of butter. Cook that seasoned chicken until it’s a golden delight. Timing is key – sync it up so the chicken and potatoes finish their dance at the same time.

Now, the grand assembly! Mix the chicken and potatoes in the skillet. Shower it with your cheese of choice – I went with cheddar, but mozzarella works too. Top it off with banana peppers or sliced pepperoncinis. You’re building flavor layers here.

Time for the finishing touch. Pop that skillet under the broiler for a couple of minutes. Watch it bubble and transform into a gooey, flavorful masterpiece. Trust me; you won’t be able to resist a sneak peek.

We definitely need to serve this with some veggies!! We had ours with a simple garden salad or you can give one of these recipes a try!

  • Lemon roasted asparagus
  • Air Fryer Frozen Brussels Sprouts
  • Slow Cooker Bacon Green Beans

Make it Healthier:

I’m always looking for new ways to add veggies to my dishes. Here are some ideas to add more nutrients to this dish or make it lighter:

  • Use diced cauliflower instead of potatoes.
  • Use cut up chicken breast instead of thighs for a leaner chicken.
  • Use light cheese or skip the cheese and use a little bit of parmesan instead.
  • Saute spinach into the chicken or add cooked broccoli or zucchin.
  • Use chickpeas instead of chicken for a vegetarian option.

Make it Kid Friendly:

I always recommend you adjust recipes based on what your family likes. If your kids or even other family members are weary of this dish here are some swap recommendations to get them trying new things without serving a completely different dish:

  • Serve the potatoes separate from the chicken.
  • Don’t add the banana peppers or take them off for the kids. Still offer them to try!
  • Serve the separated potatoes and chicken with ketchup. My kids will eat anything with ketchup.
  • Offer ranch dressing as an addition, if your kids love ranch!
  • Cut the chicken and potatoes up very small. This tends to help kids with texture issues.

Swap Ideas:

  • You can use chicken breast instead of chicken thighs. You can also cut the chicken off of the bone if you have bone in chicken thighs.
  • Try this recipe with diced steak tips! It will taste similar to Mississippi pot roast!
  • Any potatoes you have should work in this. I even think it would be delicious with tater tots or frozen home fries!
  • You can use whatever cheese you have on hand at the end! They’d all taste good!
  • Use banana peppers or peperoncinis depending on your preference or what you have on. hand!

Shopping Tips:

  • Stock up on proteins such as boneless chicken breast or thighs when they are on sale, freeze them, and then defrost them for a dish like this!
  • Block cheese is often cheaper per lb than shredded cheese and it melts a lot better. Always check your unit price!
  • Cheese freezes well, so, if it’s on sale, shredded or not, grab a few and freeze them for when you need them!
